Breadcrumbs

Never discard a dried-up
heel of bread again!
By Christine Klein

Turn those unwanted pieces of bread into perfect breadcrumbs for cooking. Not only will you save money, but you also gain complete control of what goes into your cooking.

Step 1 - Crumb the bread in a food processor. The smaller hand-held versions are fantastic for odd jobs such as this. Crumb the bread before it gets too stiff.

Step 2 - Dry the crumbs. You can either air dry in a bowl or quick-dry in the oven. If you decide to air dry, the process will take a couple of days. Keep lightly covered with a small towel and stir breadcrumbs often to make sure the bottom crumbs are drying out too. If you decide to quick-dry in the oven, bake on a cookie sheet at 250 degrees until lightly brown and dry. You can also add dried herbs of your choice. A fine Italian mix works great with most recipes. Cool and store in an airtight container.
