Garlic Broccoli Pasta
Ok, so sometimes I really don't feel like spending any more time cooking. Let's face it
It's what I do for a living, and sometimes you just want to get out of the 'office.
Since the kitchen is my office, I can't avoid it, so I look for ways to spend as little time as possible, when I'm cooking for the family, after a long day. Here is one of our favs. It's fast, easy
and cheap, with a little zip!
Garlic Broccoli Pasta:
2 lbs Broccoli (cut into floret's)
2 Cloves Garlic
1/2 Red Pepper Flakes
(or more if you like really spicy)
1/4 C Olive Oil
1 lb Pasta (any kind will do)
1/2 t Salt
1/4 t Pepper
Blanch or steam the broccoli for 4 minutes. Chill in an ice bath to stop the cooking process. Cook pasta according to package directions. While pasta is cooking, heat garlic, red pepper flakes and olive oil, in a separate pan. Add broccoli, and stir well, adding the salt and pepper. When your pasta is done, drain the water, keeping about a _ Cup in reserve. Mix all ingredients together, adding a little of the reserve water to keep the pasta from drying out. Serve and enjoy! I've also used Zucchini for this recipe. You could use just about any seasonal veggie.
